報告人簡介:美國印第安納大學(xué),博士,新加坡國立大學(xué)終身教授,食品科學(xué)與技術(shù)系副主任,新加坡國立大學(xué)(蘇州)研究院大健康生物與食品工程卓越研究中心首席研究員。研究領(lǐng)域包括分子熒光探針的設(shè)計合成與生物活性分子檢測,高通量篩選法的設(shè)計與應(yīng)用,食品中保健活性成分特別是黃酮類化學(xué),抗高血糖、減肥、功能食品,植物蛋白質(zhì)、細(xì)胞培養(yǎng)肉和3D生物打印技術(shù)。發(fā)表國際學(xué)術(shù)論文200余篇(總被引用次數(shù)兩萬余次,H指數(shù)為55,連續(xù)入選湯森路透“高被引科學(xué)家”(農(nóng)業(yè)科學(xué)類)。
內(nèi)容簡介:Flavones are one of the most important secondary metabolites of plant-kingdom, particularly fruits, vegetables, and edible medicinal herbs. They have been studied since 19th century. They have been shown wide range of health promotion activities and many of them are sold as dietary supplements for health promotion purposes. Yet, we still have a lot to learn. In this talk, I will present some latest new findings made from my lab on flavonoids particularly on food grade and green synthesis of flavone dimers and trimers. I will highlight some applications of these novel flavones for anti-diabetes, liver protection, antioxidant, and anticancer activity.
